Outward Wines Pinot Gris Pet Nat, 2025 birbet grown on limestone soilsThis lovely pet nat is made from 100% Pinot Gris. The wine is made using indigenous yeasts, bottled before fermentation is finished, and then disgorged after 6 months on the lees. This year, winemakers Natalie and Ryan disgorged some of these bottles on their Instagram, really proving how they handle each of these by hand. The bottles are also hand labeled. Pair this any way you'd like; with raw fish or shellfish, fresh veggies and salads, or grilled
